Cacao nibs (theobroma cacao) are the crushed pieces of the cocoa bean. The beans are first fermented, then dried, then roasted and then crushed into pieces. Cocoa nibs have a wonderful chocolate smell and will provide a brownie-like, nutty, roasty flavor. Each nib is roughly the size of a barley kernel and can be used directly in the mash, the boil, extracted in a tincture, or suspended in conditioning beer like hops or spices.
Cacao nibs are brewer's preferred choice for chocolate brewing additions, as they are relatively unaltered, and can be sampled in their natural state prior to use.
